While insisting on the highest standard of food and service, how can we show the identity for Taiwan through food, and further lighten and modernize Taiwanese food without sacrificing flavor and enjoyment? All we know about the incredible flavor of Taiwanese cousins is a memory from when we were little; however, what we know about Taiwanese cuisines is never enough—we feel a comprehensive craving for connecting these memories.
